So if you disconnect the Xbox, then the Ipad connects fine? Maybe the router settings are such that attempting to connect both devices exceeds the maximum number of connections allowed. If that were the case you should be able to change that setting.

So your 360 and your iPad should be able to connect to the same router without a problem. Just have them both find your router and enter in the required information (if there is a password, etc.).
